THE FOOD

 

Prepared with ingredients, supplies and organic vegetables that are only found in the peninsula, we give the dishes a completely local flavor that can only be achieved in Cabo.

 

Everything that is prepared here comes from this land surrounded by desert and pampered by the sun; in CARBÓNCABRÓN everything is cooked with mastery on a grill, the main act.

 

The kitchen recreates the most primal culinary experience of gathering around the fire to share stories and food.

Best Dining Experience in Years!!!

Sergio, our waiter, showed us to our table and expertly guided us through a world class dining experience. Yes it is an experience. The drinks, the food, the environment, all combine to make for an excellent evening that encourages you to enjoy the company you are with. Everything we had was excellent from the elote, to the shrimp, to the filet. The dessert, still not 100% sure what all was in it, was a great end to our meal. I believe it was called the desert. They also provided an amuse bouche and a small sweet to wrap things up. The fire and grill are mesmerizing and the excellent service makes you feel pampered. I can’t recommend CarbónCabrón enough.

Holy Hell

I can’t say enough about this restaurant. I’m not a vegetable person but this restaurant may change my view. We had the corn,beets,asparagus and watermelon. They were all delicious and it was artful. Sergio, our waiter, was amazing. He explained each item of the menu in detail. He was very friendly and charming as was this restaurant itself. First, every aisle with a table has walls surrounding you that consist of the stacks of wood used to make your food. There are 3 grills exclusive for vegetables, meat and fish. You can watch as the charcoals are shoveled from the wood burner to each grill. Every dish was art and we knew this since the chef was using a tweezer. We recommend the made tableside s’mores dessert as well as the banana bread.

We went with teenagers and they were taking pictures nonstop of the beautiful presentations. The food was delicious. We ordered the pulled pork, fish, and t-Rex. Each dish was interesting. Their margaritas were so fun too. Finally, the waitstaff were kind and attentive.

Poncho Cadena, internationally recognized chef born in Hermosillo, Sonora, has been celebrated by having a great and sophisticated cuisine in successful places such as LA LECHE in Puerto Vallarta and HUESO in the city of Guadalajara, Jalisco.

 

In CARBÓNCABRÓN, his most recent project, he shows his dark side through a obscure space where he unleashes his passion, letting us see its most visceral side and perhaps the most authentic.

 

In Cabo he leads an extraordinary team dedicated to preparing dishes with the unique personality of the Californias’ region, making the experience of visiting this restaurant, unforgettable.

When you arrive with us, you feel that you are about to have an afternoon that you’ll never forget.

 

Here we share a table where there is room for everyone, stories flow at the same pace as food and drinks are served and you experience the same familiarity that you live in a barbecue with old friends. The wood, the darkened bricks and the iron weld the identity of the premises. The five long community tables and the majestic grill-open kitchen are the nucleus around which the ASADOR DE LAS CALIFORNIAS creates its show.

 

Designed and conceptualized by the Multi-awarded CADENA + ASOC. CONCEPT DESIGN studio, CARBÓNCABRÓN is a creation from chef Poncho Cadena and architect Ignacio Cadena, an inspirational den of fiery fantasy where experimentation, flavours and textures collide in an expressive stroke of sensory delight. The Cadenas take on a decontextualized setting with a high degree of conceptual coherence—they have once more managed to execute their playful and innovative spirit to perfection.
